large dutch oven or 6"in deep hotel pan is required
mise en place
two 1/2 cup portions of canola or vegetable oil
5lbs ground chicken (turkey may be used as a substitute)
1/2 qt diced spanish onion
1 cup diced celery
1 cup diced carrots
1/2 cup tomato paste
1/4 cup honey
1 qt kidney beans (washed) and cooked
1/2 gallon canned crushed tomato
1/2 qt yuengling beer
spice mix is 4 oz chili pepper, 2tbs paprika, 1@ 1/2 tbs cumin, 1tbs cayenne pepper, 1tbs cracked coarse black pepper, 1/2 cup kosher salt
Preparation is easy: brown chicken and remove from dutch oven. remove all fat and add second
of oil to pot and wait till it smoking hot. Add all spices and salt at once and stir vigorously until deep reddish-brown color emerges, add vegetables and saute for 5 minutes. Add tomato paste and honey and stir. Add browned meet and stir, add beer and cook five minutes. Then add tomato puree and beans. Mix thoroughly and cover with lid or tin foil and bake at 400 for one hour, remove and serve.
