Pinapple salsa for grilled pork

One sheet pan
one mixing bowl

mise en place
one ripe pinapple peeled free of skin,sliced (roasted or grill) then & diced into 1/2 cubes
1/8 cup chopped cilantro
1/4 cup chopped red onion
juice one lime, zest about 1tsp
1/8 tsp ground cumin & cayenne pepper
1/4 cup xvo
2 tbsp chopped garlic
preparation
roast or grill pinapple and slice, dice, put into bowl warm and all other ingrediants.  Mix and set aside in refigerator for half an hour. ready to serve.
