Rice & Black Beans

Cookware needed is a 1/2 liter stainless pot for cooking rice, one 1qt. saute pan.
prep time is ten minutes.
mise-en place
1/2 cup white rice
3/4 cup water
pinch of salt
cook rice by bringing water to a boil, add salt and rice and lid pot. Cook at high heat for 1/2 minute then turn heat down to super low and cook for 15 minutes. Turn heat off and set aside with lid on.
one small onion diced
one clove garlic chopped
2tbsp. olive oil
1/3 cup canned crushed tomato
1/3 cup Chicken or preferably Beef stock (Boullion O.K.)
1 tsp chili powder
1 tsp ground cumin
1tsp salt
1/2 tsp cayenne pepper
2 cups canned black beans rinsed ( fresh if you have the time to prep)
Preparation
Add oil to "hot" saute pan. add onion and garlic and cook two minutes. Add all spice and cook one to two minutes. do not burn spice. Add beans and cook three minutes, add tomato product and stir half minute then add stock and simmer for ten minutes. Season with S&P, set aside.
Plate
Spoon desired level of rice on a plate. Spoon beans over rice.
