Quesadilla's are fun and simple to prepare and help finish off kitchen leftovers. prep time five minites

mise en place
1 eight or ten inch burrito wrap
1 tsp. chipolte pepper (canned is preferred)
2 tbsp. red onion diced
1/3 avocado (Haas) sliced
1/4 cup loose leaf spinach
1/2 cup Cheddar cheese (Monterrey jack, mozzarella, cheeses are fine too) should be enough.
1/4 cup grill chicken pieces diced or shredded.(left-over prepared chicken is great here)
Prepare: Place tortilla open on flat surface, draw an imaginary line across the wrap, begin spreading cheese followed by all other ingredients evenly below this line and fold wrap so it appears similar to the figure of a half moon. Place on any hot surface: griddle, grill, or pan with little or no cooking oil. Brown, flip and brown again. Slice into wedges and serve with sour cream and you favorite salsa.
