for four persons
4 five ounce chicken breast split lenthwise, making 8 half hearts
one bag spinach (baby preferred)
4 slices (thin) prociutto ham
4 slices m0zerella cheese
two tblspoon butter
1/8 cup olive oil (2X)
1/2 cup white wine
1/8 cup AP flour
1 clove garlic minced
dredge chicken in flour with a little salt and pepper
brown on both sides of chicken, remove and place evenly on buttered sheet pan or caserole dish.
saute chopped garlic and spinach.
place one piece of ham horizontally on top of chicken breast, spinach on top of ham, mozerellaon top of spinach. pour a little wine on top of each piece and bake at 400 for 7-10 minutes. place two pieces to a plate and the cooking liquid over the chicken.
