The recipe for a watermelon relish.
Primary use as a condiment for grill seafood.
prep time 10 minutes
cooking time 5 minutes
lets begin you will be required to dice half inch cubes of watermelon (seeds removed), 1 qt.
slice one half medium Bermuda(red) onion into inch slivers
mince one clove garlic
1 cup chopped chive
2/3 cup distilled white vinegar
1/4 cup granulated sugar
S&P (white pepper)
to prepare: bring sugar and vinegar to a boil in saucepan, add onion and galic, simmer three minutes. Pour mixture into non-reactive stainless boal, add chopped chive -stir-add watermelon and gently mix. Salt and white pepper to taste. refrigerate untill chilled.
