arugala pesto

one cuisinart chopper or blender
two cups baby arugala
1/2 cups toasted walnuts
2/3 to one cup grated parmesan (this is because differenet brands have varied levels of flavor)
2/3 cup olive oil
1/3 cup xvo
1 large clove garlic

preparation
add nuts, garlic and cheese together in blender. add half of the olive oil and puree. Add remaining oil slowly. Stop shortly before desired conistency is reached. Add xvo slowly for flavor and stop when consistency and taste are right.amazon.com
